2 large, white, ripe peaches, peeled 60grs sugar 30grs butter 2 cinnamon sticks 2 star aniseed 2 or 3 sprigs of citrus thyme Water

  • Preheat oven to 210ºC. (We recommend you place the table mat on top of an oven grill for easy handling). Place the whole peaches on the table mat, brush them with melted butter, sprinkle them with sugar and place a sprig of thyme on top. Now add the aniseed and the cinnamon. Place in the oven. When the peaches develop a rich colour, add a small amount of water to the bottom of the oven pan. After a few minutes, sprinkle the peaches with the cooking juices to make them shiny. Repeat the procedure as many times as necessary. Serve hot with whipped cream or sorbet. Instead of peaches, you can also make this recipe with pears or apples.
