An important part of the traditional preparation of macarons is the ageing of the egg whites. They should be separated from the yolk a few days in advance and placed in a bowl covered with plastic film and a few small holes to let the moisture out, allowing the water contained in the egg whites to evaporate.
In order to know whether the macaron dough is ready to go in the pastry bag or in our Decopen and fill them, we need to take a little batter and drop it slowly on top of the rest of the batter to see if it falls in the form of a ribbon, as if folding one side of a tablecloth on top of the other.
