Ingredients


Base ingredients
80g butter
160g sugar
2 eggs
80g strawberry purée / strawberry marmalade
220g flour
16g baking powder
Red food colouring

Frosting ingredients
50g butter
150g cream cheese
100g of white chocolate

Sugar nests
100g isomalt sugar
Gel or liquid food colouring as desired

  • Cupcake instructions

    1. In a bowl, whip the butter together with the sugar at room temperature until it is well dissolved, then add the eggs one at a time. Add the strawberry purée or marmalade last.

    2. Next add the flour and baking powder and again mix until you obtain a smooth mixture.

    3. Last, add the food colouring to the mixture and introduce the dough into the mould, filling it ¾ of the way.

    4. Bake the cupcakes at 180ºC for 18-20 minutes. Once baked let them cool, then they will be ready to decorate.

    Frosting instructions

    1. Melt the white chocolate, letting it cool at room temperature until it is a liquid but not excessively hot.

    2. With the help of a blender, mix the butter and cream cheese well, then add the white chocolate gradually until a smooth mixture is obtained.

    3. Fill the piping bag with the desired nozzle and decorate the surface as you like. This will be used as your sugar nest's base.

    Sugar nest instructions

    1. Place the isomalt sugar in a pan and slowly add the food colouring until it starts to become caramel.

    2. Once the mixture is a liquid, let it set until it starts to thicken, and before it becomes cold.

    3. With the help of a fork, form threads of sugar. Make Z-shaped movements repeated at a constant rhythm. It is important to complete this step on a surface that does not allow the caramel to stick when it drops.

    4. Once you have enough sugar threads, carefully make a bowl with your hands and decorate the cupcake.
