Christmas Gingerbread Cookies

What you need

Ingredients


30 units

75g butter
45g brown sugar
70g maple syrup (honey or molasses, sold in major supermarkets or health food shops)
170g pastry flour
1 tsp ginger powder
1/2 tsp baking powder (8g)

For the icing
1 egg white
200g powdered sugar
A few drops of lemon juice

  • 1. Place the softened butter in a bowl, add the sugar and beat with a whisk until creamy. Add the syrup, flour, ginger and baking powder and mix with your hands until the dough has an even consistency
    2. Divide the dough into two parts, cover with plastic wrap and let sit in the fridge for about 15 minutes.
    3. Roll out the dough on the Lékué baking mat using a rolling pin, giving it a thickness of 4mm. Cut the cookies with the cookie cutter of your choice.
    4. Pre-heat the oven to 190ºC and bake the cookies for approximately 10-12 minutes.
    5. Allow cookies to cool.
    6. Repeat the process with the remaining dough.

    For the decorative icing
    1. Beat egg white into a firm peak and gently fold in the sugar.
    2. Add a few drops of lemon juice and mix until it doubles in volume.
    3. Add the desired colouring, place the icing in the Decopen and decorate as you please.
