Apricot and walnut madeleines

200 g apricots 50 g walnuts, shelled 200 g flour 150 g sugar 100 g butter 4 eggs 1 teaspoon of lemon zest (optional) 1 teaspoon of baking powder

  • 1 Wash the apricots, cut them in half, remove the stones and cut into small cubes. Chop the walnuts. 2 Break the eggs into a large bowl, add the sugar and stir with a whisk until the mixture starts to thicken. Add the flour mixed with baking powder, and the lemon zest, and stir again. Add the melted butter and mix until blended. Finally, add the apricots and walnuts. 3 Pour the mixture into 12 muffin cups, filling them so that they are ¾ full, and bake in the oven, preheated to 180°C, for 15-20 minutes.
