Cherry tomato, asparagus and goat's cheese tartlet

1 sheet puff pastry (approx. 150 g) For the filling: 200 g cherry tomatoes 1 bunch green asparagus 1 leek (200 g) 50 g goat’s cheese, soft or creamy 2 tablespoons of olive oil 2 sprigs parsley 1 clove of garlic salt pepper

  • 1 Wash the leek and cut it into slices. Put it in the case with the oil and 2 tablespoons of water and cook for 5 minutes in the microwave until soft . 2 Roll out the pastry with a rolling pin on a floured surface and cut out discs 2 cm bigger than the tartelette moulds, then put these into the moulds and and trim the overlapping pastry. 3 Fill with leeks and tomatoes, sprinkle with salt and pepper and cook in a preheated oven at 180°C for 20 minutes until the top is lightly browned. 4 Cook the cleaned and sliced asparagus for 2-3 minutes (depending on the thickness) in the case with 2 tablespoons of water and arrange on the tarts with the shredded cheese and the chopped parsley and garlic. 5 Bake in the oven for 2-3 minutes more, remove, turn out and serve.
