Chocolate, almond and orange cake

What you need

170 g ground almonds
150 g sugar + 2 tablespoons
6 eggs
185 g butter
185 g dark chocolate
1 teaspoon vanilla sugar
1 tablespoon grated orange peel
1 tablespoon cocoa powder

Así puedes prepararlo

  • Melt the chocolate together with the butter in a double boiler until well blended.
    Separate the egg whites from the yolks (reserve the whites) and beat the yolks with the sugar (150 g), the vanilla sugar and the grated orange peel. When frothy, add the chocolate and butter mixture and continue beating, then add the almonds.
    Blend well and put aside. Beat the whites with an electric blender until you have stiff peaks, add the remaining sugar and continue beating for one minute.
    Gently fold the whites into the chocolate mixture. Pour the batter into the mould and bake in a preheated oven at 180ºC for 50 minutes.
    Let the cake cool slightly, unmould it and let it cool completely. Place the cake on a cake dish and sprinkle with the powdered cocoa using a sieve. Serve with whipped cream, if desired.
    Tip: when the cake is in the oven, cover it with the special cover for the mould during the last 10 minutes of baking so it does not dry out.


    1. Monta las claras a punto de nieve con las dos cucharadas de azúcar y con mucho cuidado y poco a poco incorpóralas en la mezcla del chocolate.


    2. Vierte la preparación en un molde y cuécelo por 40-45 min a 180ºC


    3. Deja enfriar y desmolda.
