For the base: 200 g flour 100 g butter 1 egg 1/2 teaspoon salt For the filling: 400 g courgettes 1 red onion 2 eggs 150 ml of liquid cream or whole milk 100 g grated Gruyère cheese 1 pinch of ground nutmeg 1 teaspoon thyme leaves (optional) 2

  • 1 In a bowl, quickly mix the flour, softened butter, egg and salt until well blended. Leave to stand in the refrigerator. 2 Wash the courgette and cut it into slices. Cut the onion, put it in the case with the oil and 2 tablespoons of water and cook for 5 minutes in the microwave until soft. 3 Spread the mixture prepared previously with a rolling pin on a flat, floured surface and use it to line the quiche mould, shaping with the fingertips. Trim the overlapping pastry. 4 Break four eggs into a bowl, then add the cream, salt, pepper, nutmeg and thyme and beat well. Spread the vegetables and cheese over the pastry in the mould, then pour over the liquid mixture obtained above and cook in the oven, preheated to 200°C, for 35 minutes. Leave to cool a little, turn out of the mould and cut into serving portions.
