Glazed duck with honey and soy

Ingredients


1 medium-sized duck leg (approx. 200g
25 g honey
25 g soy
1 orange
1/2 teaspoonful corn flour
Endive (optional).
Pedro Ximenez reduction (optional)

  • Wash the duck leg with hot water and dry thoroughly. Put the honey and the soy sauce in the Vapour Cook and mix well. Add the duck and dip it well in the mixture. Let it marinate for 15 minutes (optional) and drain off.
    Close the Cook and put it in the oven at 200 ºC. After 20 minutes turn the duck leg and let cook for another 20 minutes at 200 ºC with the Cook closed. Take the Cookout without switching the oven off.
    Open and take the duck out. With the Cook open, add the juice of an orange and corn flour to the cooking juices. Mix with a beater and put again the closed Cook in the oven for 5 minutes.Then, take the Cook out, mix slightly with a beater and put the duck leg on top. Bon appétit!
    Note: You can serve it with some endive leafs and a Pedro Ximenez reduction, so that its sweetness contrasts with the orange acidity.
