Cover the table with flour and make a pile with the flour in the centre as if it were a volcano. Add the egg, sugar, pistachios, butter and salt and knead as if it were bread until it becomes a homogeneous mixture. Stretch the dough with the rolling pin until it is 5 mm thick. Cut in the desired shape and place on the baking sheet. Leave enough space between biscuits to avoid them from joining together if they expand in the oven. Preheat the oven to 180º C and bake for around 12 minutes. The baking time may vary a bit depending on the oven.
