Ingredients
1 round sheet of puff pastry
200 g prawn tails
3 leeks
3 eggs
200 ml cream
2 tablespoons olive oil
1 tablespoon butter
2 sprigs dill, chopped

Remove the strands and the green part of the leeks and cut into round slices. Wash the slices, place them in a saucepan, add the butter and cook over low heat for 15 minutes.
Add the prawns, sprinkle with salt and pepper and cook for 2-3 minutes. Roll out the pastry and cover the quiche mould completely with it, pressing the edges.
Spread the leeks and prawns evenly on the bottom. Beat the eggs, add the cream, salt, pepper and chopped dill.
Pour over the leeks and prawns and bake in a preheated oven at 200ºC for 30 minutes. Unmould and serve hot.
