1/2 kg strong flour (for making bread) 320 ml of warm water 15 g baker’s yeast 100 g assorted seeds (sunflower seeds, flax, oats ...) 1 egg

  • 1 Pour the warm water into a large bowl, add the flour and finally the yeast. Knead with your hands for 10 minutes. You can also use a food processor or whisk to knead. Add the seeds (reserving 20 g) to the dough and knead again to mix evenly. 2 Put the dough in the mould, making sure that it lies flat, cover and leave to rise in a warm place for 2 hours. 3 Beat the egg and use it to brush the surface of the bread, and then sprinkle on the remaining seeds . Bake in a preheated oven at 180°C for 35 minutes. Put water in a heatproof vessel and place in the oven to form steam. 4 Remove from the oven, turn out and leave cool on a rack. If you want a harder crust, turn out and then cook in the oven at the same temperature for about 5 minutes .
