1. Preheat the oven to 160°C. Beat the egg with normal sugar and brown sugar and diced and softened butter, until the mixture is light and fluffy. 2. Add the milk, the sifted flour with the baking powder, the vanilla extract, the clove, the ginger and half of the cinnamon. Continue beating with a whisk for 2 minutes, until it has a light creamy texture. 3. Place the moulds on an oven tray and fill them with the above mix. Bake them for 18-20 minutes at 160 °C until the cupcakes have risen and are firm to the touch. Take them out of the oven and leave them to cool completely on a rack. Candied citrus zest: 1. Mix the zest with the sugar and set aside for at least 10 minutes. Topping: Mix all of the ingredients for 3 minutes with a whisk. Put this cream inside the Decomax with a small, curly nozzle, seal it and put the topping on the cupcakes. Sprinkle them with the candied citrus zest and the red sugar pellets and decorate with the fondant stars. To prepare the fondant stars: Spread the fondant on an equal layer of 3-4 mm and cut out little star shapes with a paper template. Leave to harden for a while.
