Steamed mussels with white wine

500grs clean mussels
200cl. dry white wine
1 garlic clove
1 bay leaf
10 peppercorns
½ bunch of chopped parsley
5 juniper berries
10cl olive oil

Do it this way

Pour the wine in the bottom of the pot and add the garlic, bay leaf, pepper, parsley, juniper and olive oil. Do not preheat.
Place the collapsible steamer on top of the pot and place the clean mussels in the steamer. The bottom of the steamer should not come into contact with the liquid.
Boil for 5-6 minutes.
Separate the mussels from the shells and place on a platter. Strain the cooking juices and pour over the mussels.
Serve with: French fries and Béarnaise sauce. Other shellfish can also be used for this recipe (clams, cockles, baby clams...).
