Do it this way
1. Cut the leek, the carrot and the celery into very fine julienne strips, and place everything in the grill with the clove, the bay leaves, the thyme and olive oil. Mix well, close the grill and cook in the pre-heated oven at 200ºC for 15 minutes.
2. Season the meat with salt and pepper.
3. Add the tomato and the wines to the grill, mix and place on top of the meat. Close the grill and cook in the oven at 200º for 25 minutes.
The sauce can be bound with ½ teaspoon of cornstarch dissolved in water. It must be mixed with the cooking liquid and cooked for 40 seconds in the microwave at maximum temperature.
