Ingredients


Ingredients for the pancake:
2/3 cup milk
1 egg
1 tbsp. oil or butter
1 cup all- purpose flour
1 tbsp + 2 tsp. dry active yeast
2 tbsp. sugar or honey
Pinch of salt

Ingredients for the filling
1/2 cup light Ricotta cheese
1/8 cup raspberries
1/8 cup blueberries
5 strawberries
1 1/2 tbsp sugar or syrup
5 basil leaves
1 tsp lemon juice

  • 1.Put all the liquid ingredients - the milk and egg - into the Lékué shaker. Cover and shake a couple of times.

    2.Now add the dry products: the flour, yeast, sugar or optional honey and the salt. Shake again until you have a light batter.

    3.Lightly grease the frying pan with oil or butter and then spread the batter until you have a fine layer.

    4.When it starts to bubble, use the spatula to flip the pancake. Remove it when it has browned on both sides.

    Preparation of the filling:

    1. Cut the berries into halves and put them in a bowl. Add the well-chopped basil, sugar and add a little lemon juice. Toss gently. Transfer to a fine mesh strainer over a bowl.

    2. Leave to stand until the juice is released (about 20 minutes)

    3. Discard extra juice from the bottom of the bowl. Put the berry mixture back into the bowl and add the cheese. Mix together.

    4. When it’s ready, add this mix of cheese and berries to each layer.

    5. They’re ready to enjoy!
