Matcha tea and mousse Cookie Glass

What you need

Ingredients for the cookie dough:
- 7 tbsp butter
- 3 tbsp brown sugar
- 2 tsp powdered matcha tea
- 1 2/3 cup all-purpose flour
- 1tsp vanilla extract
- Pinch of salt
- 1 egg yolk
- 2 tbsp water
- 3 tbsp. vegetable oil

Mousse ingredients
- 1/2 cup whipping cream
- 1 cup dark chocolate

    1. Cookie dough preparation

      Before you begin, organise all the ingredients and leave the butter at room temperature. Cut it into cubes and soften it in your hands (don’t melt it in the microwave or a frying pan).

    2. In the Lékué Bread Maker or a bowl, mix the dry ingredients: the flour,sugar, and salt, and gradually add the butter.

    3. Mix the butter into the flour and start kneading. Whisk the egg yolk with the vanilla extract, add it to the dry ingredients and mix again. Finally add the water and vegetable oil. Mix until you have a smooth dough.

    4. Make a ball with the dough and put it in the fridge for 20 minutes (it’s normal for the dough to become crumbly).

    5. After standing, fill each mould of the Cookie Glass with about 1/8 of the dough (to the mark shown in the mould). Make sure the moulds are well filled and pressed down.When you have all the moulds filled, bake them for 20 min at 355ºF.

    6. After 20 minutes take the cookies out of the oven and leave them to cool for a few minutes before turning them out.

    7. Chocolate mousse preparation:
      Melt 1/3 of chocolate in the microwave.When your cookies are ready, use a brush to cover the inside of the cookie with a fine layer of chocolate. This way you’ll seal the cookie.

      Let the Cookie Glasses cool for 10 minutes in the fridge.


    8. Meanwhile,bring the cream to a boil on the stove. Add the chocolate and whisk together until the chocolate is fully melted.

    9. Mix well until you have an even mix and leave to cool in the fridge. Once the mix is cool. Use a whisk to whip the cream and slowly fold in the the chocolate mixture.

    10. Fill the Cookie with the mousse in your Decomax and...enjoy!
