2 chicken breasts
4 slices cheese for melting
12 slices Iberian sausage, pork loin or chopped bits of Serrano ham
Salt
Pepper
2 tablespoons olive oil
Así puedes prepararlo
Cut the chicken breasts into two filets and cut them as if to make 2 little open books (libritos).
Season with salt and pepper and place a slice of cheese and two or three slices of sausage or some ham bits inside each one.
Close the little books, place in the steamer and sprinkle with olive oil. Close the steam case and cook in a preheated oven at 200ºC for 20-25 minutes.
This is another way to make “libritos” without frying them, thus avoiding the oil and the bread, while also making them more sophisticated by replacing the cooked ham with the sausage or Serrano ham bits.
Sirve y finaliza el plato echándole un poco de aceite de oliva.
