Almond brioche

150 g flour
60 g ground almond
40 g sugar
1 pinch of salt 25 g butter
1 egg
40 ml milk
20 g fresh yeast or 4 g baking powder

Así puedes prepararlo

Mix the flour and 50 g of ground almond with 30 g of sugar and the salt in the Vapour Cook. Add the butter at room temperature and the egg.
Mix with the hands until having a homogeneous dough. Heat the milk slightly in a different glass and add the yeast of baking powder.
Add the milk mixture to the dough and mix until it becomes elastic. Shape it oval and close the Cook.
Let ferment for 40-60 minutes in a wet place, at 30-35 ºC and with no draughts. (You can cover the Cook with a wet cloth). Once it has doubled its volume, bake for 30 minutes at 170 ºC.
Open the Cook and paint the brioche with beaten egg. Sprinkle with 10 g of ground almond and 10 g sugar. Cook for 15 more minutes at 170 ºC.
