120g good-looking strawberries
15g milk
85g heavy cream
15g butter
150g chocolate
3 egg yolks
15g sugar
2 egg whites

Bring the cream and milk to a boil and pour over chopped chocolate in a bowl. Stir until dissolved. Then add the butter which has been left to soften at room temperature or put in the microwave for a few seconds. Mix well and set aside.
Beat the egg whites until stiff with the help of an electric whisk and add the sugar. Continue beating, adding more egg yolks, and stop beating after a few seconds.
Mix 1 / 5 part of the mixture with the chocolate cream and then add the rest, folding the ingredients in carefully from top to bottom.
Place thin slices of strawberries on the sides of the pyramids.
Fill with mousse and put the dessert in the freezer.
Before serving, unmould the pyramids onto serving plates pressing the mould from the outside, let defrost for 20 minutes and serve.
