For the filo pastry: 200 g flour 50 g powdered sugar 100 g butter 1 egg Pinch of salt For the lemon cream: 1 egg 36 g sugar 20 g butter 1/2 lemon 1/4 orange Grated peel of ½ lemon

For the pastry: Cut the butter into cubes, blend with the flour and sugar by rubbing the ingredients together with your hands, add the egg and salt. Continue kneading and allow to rest covered in the refrigerator for 1 hour. Then roll out the dough, cut into rounds the same size as the mould's cups, taking into account you need 1 cm more to cover the sides. You can also use pre-cooked, readymade pastry. For the cream: Beat the sugar and the eggs, add the butter and continue beating, add the grated lemon peel and continue beating then add the juice of the lemon. When well blended, pour the batter into the moulds with the pastry. Bake at 170ºC for 30 minutes. Serve warm or cold.
