Red cabbage fondant with apples and marinated rack of pork ribs

1.5 kg pork ribs
½ red cabbage
1 onion
2-3 royal gala apples
1/2 teaspoonful juniper berries
15 cl poultry stock
2 tablespoons sugar
50 g half salted butter.

Marinade:
150 g honey
1 teaspoonful ground cumin
2 teaspoonful ground paprika
1 teaspoonful smashed garlic
Tabasco sauce

Así puedes prepararlo

Mix the marinade ingredients to make a dough. Cover the ribs with the marinade and let stand for 24 hours.
Cut the cabbage and the onion into slices. Put the cabbage, the onion, the butter, the sugar, the juniper berries and the stock in the papillote, and bake in the oven at 130 ºC for 1 hour, stirring every now and then.
Peel, empty and cut the apples in small pieces, mix with the cabbage and cook for another 30 minutes. Season.
Put the rib in the papillote and cook at 210 ºC for 20 minutes, turning the pieces at half time. Serve the rib with the cabbage.
