Cauliflower Arancini

Ingredients

  • 200g of cauliflower
  • 2 eggs
  • Saffron
  • 100g parmesan cheese
  • 20g of hydrated chia seeds
  • 1 tablespoon of corn starch
  • flour
  • Bread crumb
  • Mozzarella (cheese)

Method

  1. Hydrates the chia with 60g of water.
  2. Crush, with the help of the Veggie Ricer, the flowers of cauliflower and cook with a spoonful of water and saffron for 4 minutes (maximum power) in the Steam Case.
  3. Grate the parmesan cheese and mix it with the hydrated chia, the cooked cauliflower, a spoonful of corn starch and an egg, it should be with a dough texture.
  4. Cut the mozzarella cheese into cubes that will go to the center of each ball.
  5. With the dough, make uniform balls, place the cube of mozzarella cheese in the center and fry them.
  6. To batter, raisins first for flour, then for egg and finally for crumb bread. (repeat this process when you see it necessary in this order).
  7. You can bake the arancini with a little oil or fry until they are golden.
