Chocolate Ice Cream

Prep Time: 30 min + freezing
Makes: 4 ice lollipops
Ingredients
- 2 egg yolks
- 25 g / 0.88 oz icing sugar
- 125 ml / 4.23 fl oz whole milk
- 75 ml / 2.54 fl oz double cream (35% fat)
- 80 g / 2.82 oz good-quality dark chocolate
Method
- 1. Whisk the egg yolks, sugar, and milk in a bowl until smooth.
- 2. Pour the mixture into a saucepan and cook over medium heat for 3 minutes, stirring constantly. Important: Do not let it boil.
- 3. Remove from the heat, add 50 g of chopped chocolate, and stir until melted.
- 4. Let the mixture cool, then add the cream and mix well. Once chilled, stir in the remaining chocolate.
- 5. Fill the Ice Lollipop moulds and freeze for at least 5 hours.
- 6. Once out of the freezer, wait 3 minutes before removing the ice lolly from the mould.
- 7. Your chocolate ice lollipops are ready to enjoy!
