Plum and ricotta cake

Surprise yourself with this delicious fruity cake!
Ingredients
- 3 purple plums
- 100 g raspberries (optional)
- 240 g flour
- 1 tsp baking powder
- A pinch of salt
- 115 g butter
- 270 g brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 60 g sunflower oil
- 200 g ricotta cheese or cottage cheese
Method
- Wash the plums, remove the stone and cut into wedges.
- In a large bowl, beat the softened butter with 3⁄4 parts of the sugar using an electric whisk. While continuing to beat, add the eggs one at a time and then the vanilla, salt, and ricotta. Next, mix the flour with the baking powder and add little by little to the previous mixture, with the whisk at low speed.
- Pour the mixture into the mold and distribute the plums, raspberries and remaining sugar on top. Preheat the oven to 180 ºC and bake the cake for 45-55 minutes. Remove from oven, let cool and remove the mold. *For best results, grease or flour the pan at the beginning of the preparation.
