Small oat muffins with blackberries

Prepare these little oat muffins full of great flavor!
Ingredients
- 2 eggs
- 120 g brown sugar
- 80 ml sunflower oil
- 125 ml whipping cream
- 125 ml milk
- 1 tsp vanilla extract
- 100 g flour
- 120 g wholemeal flour
- 100 g ground oats
- 2 teaspoon baking powder
- 1 pinch of salt
- 40 g butter
- 150 g fresh blackberries or raspberries
- 35 g oats
Method
- In a bowl, beat the eggs with the sugar and oil until light and frothy.
- Add the milk and cream, vanilla, flour with the baking powder, ground oats and a pinch of salt and continue beating with an electric whisk for 2 more minutes. Then, add the melted butter and mix again.
- Fill the cups of the mold and add the blackberries and oat flakes. Bake in the oven, preheated to 180 °C, for 20-25 minutes until the muffins have risen and are firm to the touch. Remove from the oven and allow to cool. *For best results, grease or flour the pan at the beginning of the preparation.
