Strawberry Ice Cream

Pink and sweet, so yummy!

Difficulty: Easy
Prep Time: 30 min + freezing
Makes: 4 ice lollipops

Ingredients

  • 200 g / 7.05 oz strawberries
  • 25 g / 0.88 oz icing sugar
  • 1 tsp / 1 tsp honey
  • 100 ml / 3.38 fl oz heavy cream (35% fat)
  • 30 g / 1.06 oz blueberries (optional)

Method

  1. 1. Wash and hull the strawberries, then chop them. Set aside 25 g and blend the rest into a purée.
  2. 2. Add the icing sugar and honey to the strawberry purée.
  3. 3. Whip the cold cream until it reaches a yogurt-like consistency.
  4. 4. Gently fold the whipped cream into the purée. Add the reserved chopped strawberries and halved blueberries.
  5. 5. Fill the Ice Lollipop moulds and freeze for at least 5 hours.
  6. 6. Once out of the freezer, wait 3 minutes before removing the ice lolly from the mould.
  7. 7. Your strawberry ice Lollipops are ready to enjoy!
