Spicy Aubergines

Ingredients

  • Ingredients Amount Peeled Aubergines 1 unit Chopped Garlic 2 cloves Chopped Onion 1 unit (100 g) Olive Oil 2 tablespoons Sweet Pepper 1 teaspoon Curry ½ teaspoon Cumin ½ teaspoon Black Sugar 1 tablespoon Tomatoes peeled and cut in dice

Method

  1. Cut the vegetables into small dice, place them on the grill with two tablespoons of olive oil, salt and pepper. Bake in the oven for 30 minutes at 180ºC.
  2. Make alioli with the egg yolk, the garlic and oil.
  3. Add the tomato, place over the cod and cook for 10 minutes at 180ºC.
  4. Cover the cod with the alioli and cook for 5 minutes more with the grill open.
