Carrot cake donut

What you need

Carrot
100g
Cooked sweet potato/pumpkin
75g
Egg
1 ud.
Dates
100g
Water
40ml
Olive oil
50g
Cinnamon
1 tbsp
Nutmeg
1 tsp
Cardamom
1 tsp
Baking powder
10g
Gluten free flour
100g

For the topping:

Cream cheese
100g
White chocolate
50g
Ground cinnamon
To taste

Así puedes prepararlo

  1. Preheat the oven to 180ºC.
  2. Remove the stones from the dates and leave them to soak for 10 minutes in 60 ml warm water.
  3. Blend the dates with water until you get a smooth paste. Strain and set aside.
  4. Peel and slice the carrot. In a separate bowl, mix all the wet ingredients together to form an even mixture.
  5. Add the dry ingredients and mix.
  6. Place the mixture in each chamber of the Mold for donuts using a spoon or a piping bag.
  7. Bake for 20 minutes at 180ºC. Leave to cool and remove. 
  8. For the topping, melt the white chocolate in a microwave for 30 seconds. Mix and place it back in the microwave for another 20 seconds until it is liquid.
  9. Mix the cream cheese with the melted white chocolate until the mixture is smooth.
  10. Apply the topping using a piping bag or a spatula, and sprinkle on cinnamon to taste. Done!
