Lemon bundt cake
Ingredients for the cake:
3 eggs
120 g lemon yogurt
250 g flour
200 g sugar
120 g olive oil
1 envelope of baking powder
1 teaspoon grated lemon peel
1 teaspoon butter
Ingredients for the glaze:
1 egg white
200 g icing sugar
A few drops of lemon juice

In a bowl, add the eggs and sugar and beat with an electric whisk for a couple of minutes. Add the lemon peel, yogurt, and the sifted flour and baking powder. Mix again and finally, add the oil.
Pour the mixture into the mold and bake in the oven, preheated to 180 ºC, for 1 hour. Before taking it out, stick a toothpick in the center to see if it's done. If it does not come out clean, cook for another 5 to 10 minutes. Finally, let cool completely and remove from the mold.
For the glaze, beat the egg white with the sugar. Add a few drops of lemon juice for a more unctuous texture and decorate the surface of the cake. Finish the savarin with a little lemon zest.
