Vanilla & Cherry Ice Cream - Creamy vanilla meets cherry surprise!

Makes: 4 ice lollipops
Ingredients
- 1 tsp vanilla extract or vanilla sugar
- 2 egg yolks
- 100 ml heavy cream (35% fat)
- 100 ml whole milk
- 50 g sugar (divided: 25 + 25 g)
- 75 g cherries or raspberries
Method
- 1. Pit the cherries, chop them into small pieces, and set aside.
- 2. In a bowl, beat the yolks with 25 g of sugar. Bring the milk and cream to a boil with the vanilla, then slowly pour over the yolks while whisking.
- 3. Return the mixture to the saucepan and cook for 1–2 minutes over medium heat, stirring constantly. Important: Do not let it boil.
- 4. Let it cool. Meanwhile, heat the remaining sugar with a few tablespoons of water in a small pan for a couple of minutes.
- 5. Add the cherries, remove from heat, and let cool.
- 6. Fill the Ice Lollipop moulds with the mixture and a few cherry pieces. Freeze for at least 5 hours.
- 7. Once out of the freezer, wait 3 minutes before removing the ice lolly from the mould.
- 8. Your vanilla and cherry ice lollipops are ready to enjoy!
