Vanilla & Cherry Ice Cream - Creamy vanilla meets cherry surprise!

Makes: 4 ice lollipops

Ingredients

  • 1 tsp vanilla extract or vanilla sugar
  • 2 egg yolks
  • 100 ml heavy cream (35% fat)
  • 100 ml whole milk
  • 50 g sugar (divided: 25 + 25 g)
  • 75 g cherries or raspberries

Method

  1. 1. Pit the cherries, chop them into small pieces, and set aside.
  2. 2. In a bowl, beat the yolks with 25 g of sugar. Bring the milk and cream to a boil with the vanilla, then slowly pour over the yolks while whisking.
  3. 3. Return the mixture to the saucepan and cook for 1–2 minutes over medium heat, stirring constantly. Important: Do not let it boil.
  4. 4. Let it cool. Meanwhile, heat the remaining sugar with a few tablespoons of water in a small pan for a couple of minutes.
  5. 5. Add the cherries, remove from heat, and let cool.
  6. 6. Fill the Ice Lollipop moulds with the mixture and a few cherry pieces. Freeze for at least 5 hours.
  7. 7. Once out of the freezer, wait 3 minutes before removing the ice lolly from the mould.
  8. 8. Your vanilla and cherry ice lollipops are ready to enjoy!
