Chocolate And Hazelnut Cake

Ingredients
- Pre-heat oven 30 minutes in advance to 160º C
- 150 g. chocolate
- 115 g. icing sugar
- 125 g. milk
- 4 egg yolks
- 40 g. cocoa powder
- 150 g. butter
- 130 g. flour
- 1 pinch salt
- 1 teaspoon baking powder
- 100 g. hazelnuts
- 3 egg whites
- 85 g. brown sugar
Method
- Melt the chocolate in a bain-marie or in the microwave. Mix with the icing sugar, milk and egg yolks. Add, in this order, the cocoa powder, softened butter, flour (previously mixed with the salt and baking powder) and the hazelnuts. Beat the egg whites until they form soft peaks, add the brown sugar and continue beating until you have a smooth, shiny meringue mixture. Add this to the hazelnut mixture. Fill the mould and bake at 160º C until a skewer comes out clean (approximately 1 hour). Leave to cool and then turn out. Before serving, sprinkle with icing sugar. This cake is delicious served with vanilla ice-cream.
