Rice Pudding

Ingredients

  • 120 g round grain rice
  • 300 g water
  • 550 ml milk (300 ml at the start + 250 ml at the end)
  • 70 g sugar
  • 1/2 stick of cinnamon
  • 1 teaspoon ground cinnamon
  • 1/2 peel of a lemon

Method

  1. Add the rice and water to the Rice & Grain Cooker. Mix, cover and cook 12 min. at 800 W in the microwave.
  2. Add 300 ml of milk, the sugar, the cinnamon stick, the lemon peel and continue cooking 6 more min.
  3. Stir the contents and continue cooking 9 more minutes.
  4. Stir and take out the lemon peel and cinnnamon stick.
  5. Add 250 ml cold milk, mix and leave in the refrigerator approx. 1 hour or until it is cold.
  6. Comments (optional): 1. Gluten-free recipe. Suitable for people with celiac disease. 2. You can substitute the sugar with molasses, agave syrup or sweeteners that are specifically suitable for people who cannot consume sugars. 3. If you prefer the rice to have a creamier texture, substitute 50 ml of the cold milk added in the last step with the same amount of cream. 4. Peel the lemon with a lemon peeler to obtain the yellow part, which contains the essential oils, leaving out the white part, which is bitter. You may also be interested in
