Baked cheesecake with cherries
Ingredients for the cake:
1 package of Marie cookies + 4 cookies
100 g butter
400 g cream cheese spread
6 tbsp sugar
3 sachets of curd powder

200 g cherries
100 g sugar
1 vanilla pod

Crush the cookies with the help of a food processor, add the softened butter and 1 tablespoon of water and mix until the ingredients are incorporated. Pour the mixture into the mold and line the base and walls with it to a uniform thickness, pressing with the fingertips.
Beat the cheese with the sugar, milk, and curd to eliminate any lumps and pour the resulting liquid into the mold over the cookie base.
Bake in the oven, preheated to 180 ºC, for about 25-30 minutes or until the center has set.
Wash the cherries and remove the pits by cutting them in half. Put them in a saucepan with 80 ml of water, the vanilla pod split in half, and the sugar, and cook for 7-8 minutes. Leave in the saucepan until they cool. Then remove the cherries and let the syrup thicken for a few minutes.
Once the cake has been cooked, leave it to cool completely. Place in the refrigerator for a few hours to make it more solid, remove the mold and enjoy.
