Christmas Macarons recipe
Prepare this macarons recipe for Christmas and surprise your loved ones
Ingredients (For about 30 macarons)
280 g icing sugar
160 g ground almonds
3 egg whites
Pinch of salt
55 g normal white sugar
A few drops vanilla extract
Food coloring (optional)
For the filling:
125 g butter
125 g icing sugar
4 tablespoons milk
A few drops of vanilla extract or vanilla beans

Making the macaron:
Sift the icing sugar and mix well with the ground almonds.
In a bowl, beat the egg whites to stiff peaks with an electric mixer, add the salt, then the normal sugar little by little until you get a thick meringue. Add half of the ground sugar and almond blend and stir delicately with a spatula from the top down.
Add the remaining icing sugar and ground almond mix along with a few drops of vanilla extract and continue to stir delicately until thoroughly blended. For colorful macarons, add some drops of a food dye to the mix.
Pour part of the mixture into the Decomax with the large round tip and make large buttons of the same size on the macaron mat.
Bake in the oven, pre-heated to 150ºC, for 20 minutes until they are hard to the touch. Repeat the operation with the rest of the dough.
Let them cool and fill them with jam, chocolate cream and hazelnuts or praline. You can also use meringue mixed with jam to taste.
Making the filling:
In the blender jar, add the sifted sugar, the butter at room temperature, milk and a few drops of vanilla extract.
Mix at low speed until the ingredients are evenly blended. Then beat for about 7 minutes at maximum speed.
Finally, fill the macarons with the resulting cream.
