200 ml of whole milk 1 egg 30 ml of water 10 g of olive oil 15 g baking powder 30 g of sugar 1 teaspoon of ground cinnamon (about 2 g) 160 g of flour

  • In a bowl, whisk milk, egg, water and oil. Add baking powder, sugar, cinnamon and flour slowly and mix until blended. Place a third of the mix (140 g) in the SpanishOmelette, close it and microwave for 1 minute and 30 seconds at 800 W. Turn the container over and microwave 1 additional minute. Repeat 3 times for 3 pancakes. Season to taste and serve. Comments: If the pancake sticks to the container when it is turned over, continue with the procedure as the heat will cause it to unstick. The wheat flour can be substituted for a gluten-free bread mix. The result of the process may vary depending on the mix used. The recommended serving is 1 pancake per person, since the diameter of the pancake is greater than when prepared traditionally. The pancake does not have the characteristic toast, however the speed of the preparation, its fluffiness and flavour are three features that will please and surprise.
