Seafood and guacamole Christmas appetizer

What you need

Ingredients

1 medium lobster or 6 prawns

Juice from 1 lemon

Salt

Pepper

60 ml mild olive oil

2 tablespoons white wine

Sweet paprika

Sprouts to decorate

 

For the guacamole:

2 medium avocados

1⁄2 tender onion

1 firm red tomato

1 large or 2 small limes

2 cilantro stalks (optional)

  1. Separate the head from the body, whether using lobster or prawns. If using lobster, chop the head of the lobster.

  2. Place the shellfish bodies in the Steam case. Add the squeezed lemon, salt and pepper, and cook in the microwave for 3 minutes at 900W. Take out and set aside.

  3. In the same case, with the stock still in it, insert the heads of the seafood, oil, the clove of garlic, peeled and sliced, the wine, a teaspoon of sweet paprika and a pinch of salt. Cook in the microwave for 2 and a half minutes at 900W. Remove, stir by pressing the heads to release the liquor, strain and set aside.

  4. Cut the avocados in half and remove the bone and skin with a spoon. Squash them with a fork in a deep dish and add the lime juice and the onion, tomato and cilantro, all finely chopped. Add a little salt and mix well.

  5. Half fill 6 glasses with the homemade guacamole, place two slices of lobster inside each and finish with a tablespoon of the prepared oil and some sprouts to taste.
