Small oat muffins with blackberries

What you need

Ingredients:

2 eggs

120 g brown sugar

80 ml sunflower oil

125 ml whipping cream

125 ml milk

1 tsp vanilla extract

100 g flour

120 g wholemeal flour

100 g ground oats

2 teaspoon baking powder

1 pinch of salt

40 g butter

150 g fresh blackberries or raspberries

35 g oats

Así puedes prepararlo

  1. In a bowl, beat the eggs with the sugar and oil until light and frothy.

  2. Add the milk and cream, vanilla, flour with the baking powder, ground oats and a pinch of salt and continue beating with an electric whisk for 2 more minutes. Then, add the melted butter and mix again.

  3. Fill the cups of the mold and add the blackberries and oat flakes. Bake in the oven, preheated to 180 °C, for 20-25 minutes until the muffins have risen and are firm to the touch. Remove from the oven and allow to cool.

 

*For best results, grease or flour the pan at the beginning of the preparation.
