Courgette and beans meatballs

Cook delicious courgette and beans meatballs!

Ingredients


10,5 oz. of zucchini (300 g)
4 oz. of white beans (120 g)
2 cloves of garlic
1,7 oz. of onion (50 g)
3,5 oz. of bread (100 g)
1/2 tablespoon of lemon
1/2 tablespoon of chili pepper
1/2 tablespoon of oregano
1/2 tablespoon of parsley
Salt
Pepper
Olive oil

For the sauce:
3,5 fl.oz. of olive oil (100 ml)
1 oz. of rocket (30 g)
2 oz. of fresh basil (30 g)
3 oz. of pine nuts (30 g)
Zest of 1 lemon
Salt

Así puedes prepararlo

    1. Peel and chop the onion and garlic. In a frying pan, heat the oil and fry the onion for about 8 minutes.

    2. Wash, trim and grate the courgette. Add the garlic and grated courgette and cook together for another 6-7 minutes.

    3. Mash the beans with the bread, add the vegetables and spices until you obtain a smooth mixture.

    4. Add the mix to the Veggie Balls to prepare the balls.

    5. Place the veggie balls on a baking tray with the Silicone baking mat and place in a preheated oven at 200ºC. Cook for about 10 minutes or until golden.

    6. For the sauce, mix all ingredients in a blender.

    7. Serve the veggie balls with the sauce and... all set! Enjoy yourdelicious vegetarian courgette and beans meatballs.
