Cod Cubes a la Verbena ( with Courgette Flakes on a Bed of Bicolour Cardoons)
Ingredients
2 thick cubes of cod, 1 thin courgette, 300 g of red and white cardoons, 1 onion, some leaves of fresh verbena or 1 bag of verbena for infusion, 5 cl of vegetable broth, 1 spoonful of milk cream, salt, pepper, nutmeg
Así puedes prepararlo
Chop the monkfish into 3 cm wide cubes. Make a skewer (a total of 8) with three cubes of monkfish, one of them wrapped in a bacon slice, and place on the tray. Pour the wine and place the rosemary sprig inside the Steam Case and place the tray with the skewers on top. Season with salt and pepper. Close and cook in a preheated oven at 200ºC for 12 minutes. Open the Steam Case and brown under the grill for 2-3 minutes. Microwave: 3-4 minutes at full power. When done, remove the case from the oven, serve the skewers on a warm serving dish and blend the cooking juices with the cream and mustard. Heat the sauce if necessary and pour over the fish.
